New Restaurants in St Barts: 2026–27 Season Openings
The biggest new restaurants in St Barts this winter are Langosteria St Barth at Cheval Blanc on Flamands Beach, Zuma in Gustavia (opening November 25, 2026) and Loulou on Shell Beach at Fouquet’s Saint-Barth (due November 2026). Three Gustavia newcomers from the past year, Bar des Prés, Pablõ and Casa Coloniale, are heading into their first full high season.
St. Barthélemy reopens every autumn after its quiet September and October, but the 2026–27 season brings more international names to the island at once than usual. Below is what each new opening is, where it sits, when it opens and how to book, using only details confirmed by the restaurants, their hotels or recent reporting as of October 2026.
Base Yourself Close to the New Tables
Four of the six restaurants below are in or beside Gustavia. A villa on the Lurin or Gustavia hillside turns dinner into a short ride home.

The Big Three: This Season’s Headline Openings
Langosteria St Barth, Flamands
Langosteria, the Milan seafood group, is opening its first restaurant outside Europe inside Cheval Blanc St-Barth on the Baie des Flamands. The island guide Access SB lists an October 22 opening and dinner from 6 pm to 11 pm, with requests needed at least 24 hours ahead. Cheval Blanc’s own announcement, dated October 20, 2026, describes crudi and raw seafood starters, robata dishes, a black grouper chateaubriand, paccheri with sea bass, and tiramisù and stracciatella ice cream for dessert. Bookings go to langosteria.stbarth@langosteria.com or +590 590 27 10 81. For the full menu notes and booking strategy, read our Langosteria St Barth opening and booking guide.
Zuma Saint-Barth, Gustavia
Zuma’s official site gives an opening date of November 25, 2026 at 19 Rue de la République, with service every day from 6 pm to 1 am. Luxury Travel Magazine reported in September 2026 that the restaurant will run three kitchens (a main kitchen, a sushi counter and a robata grill), seat most guests indoors with some semi-outdoor high-tops facing the waterfront, and operate seasonally through April 2027, with a DJ and bar taking over later in the evening. Reservations are already open online. Our Zuma St Barth guide to hours and reservations covers the details.
Loulou, Shell Beach
Shellona, the long-running restaurant on Shell Beach (Anse de Grand Galet), has closed. In its place, Fouquet’s Saint-Barth, the Barrière hotel above Gustavia, is opening Loulou, which Barrière lists as “opening November 2026.” The hotel describes a relaxed, family-style beach restaurant decorated in white wood and shells. Access SB, updated October 9, 2026, calls the menu Mediterranean with generous sharing plates, while Islands reported a Riviera-inspired Italian slant, so expect a Mediterranean beach lunch rather than formal dining. No exact date or hours had been published as of late October. Until Loulou opens, Fouquet’s guests are sent to the partner beach club La Guérite Beach at Saint-Jean.
Gustavia’s Newest Tables: Opened in the Last Year
These three opened between late 2025 and early 2026, so the 2026–27 winter is their first full peak season. Each sits within a short walk of the harbor. If you want the established names too, start with our guide to the best restaurants in Gustavia.
Bar des Prés by Cyril Lignac
French chef Cyril Lignac brought his Bar des Prés concept to St. Barts in early 2026; Caribbean Journal covered the opening on February 2, 2026. It is the fifth Bar des Prés after Paris, London and Dubai, with 88 seats plus bar seating and interiors by designer Lázaro Rosa-Violan. The cooking pairs French technique with Japanese flavors: think salmon tataki, black cod with yuzu miso and sushi. Access SB lists it at 33 Rue Jeanne d’Arc, open Monday to Saturday from 7 pm, with an average of €52 for a starter and main on its May 2026 menu.
Pablõ
Pablõ took over the former Joël Robuchon building on the Gustavia waterfront (15 Rue du Bord de Mer) and opened in November 2025, according to the villa agency Sun Beach House’s August 2026 restaurant guide. It is the Indie Group’s Caribbean version of Pablo in Saint-Tropez: a rooftop that opens at sunset for shared plates such as ceviche, sashimi and tacos, and a night bar downstairs with DJs. Access SB’s listing, updated October 9, 2026, shows it reopening in November, with tables booked through SevenRooms.
Casa Coloniale
Casa Coloniale moved into the former Baz Bar space on Rue Samuel Fahlberg, steps from the harbor, in late 2025. Access SB lists it as open daily from 6 pm to midnight, with a French menu built around seafood and Caribbean produce, and Grazia’s September 2026 roundup highlighted its sharing plates and wood-fired cooking. Its 2026–27 reopening date had not been posted as of October 2026, so check before you plan an evening around it.
How to Book New Restaurants in St Barts
- Book with your flights. Christmas, New Year’s Eve and February are the busiest dinner weeks of the year, and first-season openings draw extra demand.
- Use the official channel. Zuma and Pablõ take bookings through SevenRooms; Langosteria, Loulou, Bar des Prés and Casa Coloniale accept requests through their Access SB listings, and Langosteria also by email and phone.
- Respect the 24-hour rule. Several listings ask for at least 24 hours’ notice and confirm by email.
- Plan the ride home. Roads are steep and dark after sunset, and taxis are limited in peak weeks. Flamands (Langosteria) is a drive from Gustavia; the four Gustavia venues are walkable from Lurin and the harbor.
- Check November dates. Many island businesses reopen in stages through November, so verify hours a few days before you go.
Planning Around the New Openings
Late November is a good window to try the new restaurants in St Barts before the holiday rush: Zuma opens on November 25, Loulou is due the same month, and Langosteria will have a month of service behind it. From mid-December, expect higher prices and fuller books across the island. A practical week might pair a beach lunch at Loulou on Shell Beach, a seafood dinner at Langosteria in Flamands and a late Japanese evening at Zuma or Bar des Prés in Gustavia.
