Abyss Restaurant St Barts: Beachfront Dinner with Chef Guillaume Gillan

Abyss is the beachfront dinner restaurant at Le Barthélemy Hotel & Spa on the Baie de Grand Cul-de-Sac, St. Barthélemy. The kitchen is now led by Executive Chef Guillaume Gillan, serving elegant French gourmet cooking with Caribbean flavors and a menu that celebrates fish. Dinner runs from 7 pm to 10 pm, with tables set right on the sand.

Abyss has long been one of the east side’s most romantic dinner tables: candlelight, a calm turquoise lagoon and an underwater-aged house champagne. With Chef Gillan now at the helm, here is what has changed, what stays the same, and how to book a table this season.

Stay on the East Side for Dinner Without the Drive

Abyss is dinner only, so staying around Grand Cul-de-Sac, Petit Cul-de-Sac or Pointe Milou turns the evening into a short ride home. Compare villas on the island’s quiet east side.

A New Chapter: Chef Guillaume Gillan at Abyss

Abyss is now working with Executive Chef Guillaume Gillan, who took over the kitchen from Michelin-starred chef Jérémy Czaplicki. The direction stays true to what made the restaurant a destination: classic French technique paired with bold, fresh Caribbean flavors, local ingredients and seafood at the center of the plate. The Boston Globe described Abyss under Chef Gillan as “serving elegant French gourmet food with Caribbean flavors” in December 2025.

Le Barthélemy’s own dinner page sums up the kitchen simply: “The menu at Abyss celebrates fish.” Expect refined seafood dishes, local produce and a caviar selection, served in a setting that feels relaxed rather than formal.

The Setting: Dinner with Your Feet in the Sand

Tables sit directly on the beach of Grand Cul-de-Sac, looking across the shallow, reef-protected lagoon toward the hills. The mood is barefoot luxury: soft lighting, sea breeze and live music on many evenings. It is noticeably quieter than the Gustavia and Saint-Jean dinner scene, which makes it a favorite for couples and for guests staying in the east-side villas.

For the lay of the land, beaches and where to stay nearby, see our Grand Cul de Sac neighborhood guide.

The Underwater-Aged Champagne

Abyss’s signature pour is its house champagne, Leclerc Briant Abyss, which spends a year aging deep in the Atlantic Ocean. The idea was inspired by the discovery of a 170-year-old shipment of champagne found perfectly preserved on the seabed. Ordering a bottle is part of the Abyss experience and a natural match for the fish-forward menu.

Private and Special Tables

  • The Love Table: a private table on the beach or in a secluded spot for a romantic dinner for two, from €690 for two. Popular for proposals and anniversaries.
  • The Bohemian Table: a feet-in-the-sand dinner under the stars for small groups. Ask the restaurant about current availability.

Before Dinner: The Seven Stars Bar

Next to Abyss, Le Barthélemy’s Seven Stars Bar serves 12 signature cocktails inspired by the zodiac and a tapas menu, from 6 pm to 11 pm. Arrive early for a sunset aperitif before your table is ready. It also carries the hotel’s evening program while Abyss is closed for the summer.

How to Make the Most of a Night at Abyss

1. Book early in high season

The restaurant asks for at least 24 hours’ notice, but Christmas, New Year’s Eve and February fill much earlier. Request your table as soon as your travel dates are set.

2. Make a day of it at Grand Cul-de-Sac

Lunch at Amis St. Barth, the hotel’s beach restaurant, spend the afternoon paddleboarding on the lagoon, then stay for dinner at Abyss.

3. Dress for the sand

Resort chic is right. You will be dining on the beach, so leave the heels at the villa.

4. Plan the ride home

St. Barts roads are steep, narrow and dark after sunset, and taxis are limited in peak season. Book your return taxi or driver when you book your table.
